a breakfast recipe

You'll need:

1 1/2 cup potatoes (Diced)

3 Egg whites

1/3  Of a large copped onion Or half of a medium onion

1/2 cup of mushroom (but you can skip if your not a mushroom fan)

1 bell pepper


 I use a cast iron medium sized pan but you can use any kind of pot.

So put some extra virgin olive oil in the bottom of your pan and set heat on medium.

Always put your mushrooms and bell pepper and potato in first until the mushrooms look like they are starting to brown

Now put your egg whites in and continually stir

Straight after you put the eggs in put the onion into the pan

Continue to stir repeatedly until the egg whites start to turn white and fluffy

After the eggs are cooked through turn off heat and remove from the burner

Let sit for about 3 mins

Serves about 2

You can increase the ingredients to serve more
